Boiling cuts broccoli's anti-cancer benefits
"If you want to get the maximum benefit from your five-portions-a-day vegetable consumption, if you are cooking your vegetables, boiling is out," Thornalley said Wednesday, adding that eating raw vegetables is best.

"You need to consider stir-frying, steaming or microwaving them."

When broccoli and cauliflower were boiled for 30 minutes, the vegetables lost about three-quarters of the glucosinolates, the researchers report in the Journal of Food and Chemical Toxicology. "

Nutrients found to cut macular degeneration risk

CHICAGO (Reuters) - Taking vitamin D and eating fish -- especially those high in omega-3 fatty acids -- may reduce the risk of the most common cause of blindness among the elderly, researchers said on Monday.

Doctors do not know how to prevent age-related macular degeneration, the leading cause of blindness after age 60, but two studies in the Archives of Ophthalmology suggest nutrient-based treatments may help. "
